Ingredients

  • 1 cup sugar
  • ¼ cup water
  • 1/3 rd cup honey

Instructions

  • firstly, in a large vessel dissolve 1 cup sugar and ¼ cup water.

  • add in 1/3rd cup honey and stir well.

  • further boil on medium flame for 15 minutes.

  • stir occasionally, to prevent from burning.

  • boil till the syrup thickens and turns golden brown.

  • check for sugar syrup consistency by dropping the syrup into water. make sure the syrup hardens and form crystal. alternatively, check for temperature - 300 degree fahrenheit or 150 degree celsius.

  • turn off the flame and allow to cool slightly. this helps to thicken.

  • spoon the candy over butter paper or into the mold cavities.

  • place a toothpick in center making sure to cover the back of the stick.

  • allow to cool completely and remove once hardened.

  • finally, wrap honey lollipops with butter paper, and store in airtight container at room temperature, for up to a month.
