Sugar cookies are just about the best sweet treat out there. Even though they’re often overshadowed by cookies with fancier mix-ins, these simple, delicious cookies are really the ones I always go to when I need something sweet, delicious, and ready for any occasion. The thing I love about sugar cookies is how neutral they are. They’re sweet and buttery but not aggressively flavored with all kinds of extracts or mix-ins. They’re just effortless and very delicious. That makes them perfect for tweaking to fit any occasion. For example, I use them for delicious Easter treats by simply frosting them with colored buttercream and throwing some sprinkles at them. It’s easy, delicious, and perfect for the holiday. No eggs needed in this cookie recipe. Perfect!

How to Make This Easter Sugar Cookie Recipe

It’s not difficult at all to make these sugar cookies. Both the cookies and the buttercream use simple ingredients in simple steps, so anyone can make them easily.

Step 1: Prep

Preheat the oven to 350 degrees and lightly grease 1 or 2 baking sheets.

Step 2: Combine the Dry Cookie Ingredients

Whisk the flour, baking powder, and salt together in a medium bowl.

Step 3: Combine the Wet Cookie Ingredients

Beat the softened butter, oil, and sour cream on medium speed in a large bowl for 1 minute. Then, add the sugar and vanilla and beat until smooth.

Step 4: Make the Dough

Add the dry ingredients to the wet ingredients and mix on low speed until the ingredients just form into a dough.

Step 5: Bake

Using a 2-inch cookie scoop, scoop out the dough and place the balls on the prepared baking sheet. Leave the edges rough. Flatten each cookie a bit to produce even more jagged edges, then bake for 10 to 12 minutes until the edges are slightly browned.

Step 6: Cool

Remove the baking sheet and let the cookies cool on it for 5 minutes. Then, place the cookies on a wire rack to cool completely.

Step 7: Make the Buttercream Frosting

Cream the butter, milk, and vanilla in a medium mixing bowl. Then, gradually add the powdered sugar and beat until smooth and creamy. Separate the frosting into as many bowls as you want to color. Then, add pastel food coloring gel to each batch to reach your desired color.

Step 8: Decorate the Cookies

Frost the cooled cookies with a generous amount of frosting. Then, sprinkle with coarse sugar and Easter sprinkles. Let the frosting set, then serve and store.

Recipe Tips

  • Be sure your butter is fully softened for easy creaming and to prevent little bits of raw butter being in the cookies or the frosting.
  • Mix your dough until it’s just combined. The key to soft sugar cookies is NOT to overmix the dough.
  • Always be sure your cookies are fully cooled before frosting them. Warm cookies will cause the butter in the frosting to melt and break the frosting.

Variations

  • Omit the food coloring and serve these frosted sugar cookies at any gathering for any occasion.
  • Use different food coloring to make these cookies fit any holiday.
  • Try adding your favorite mix-ins for a fun new twist on sugar cookies.

What to Serve with this Easter Sugar Cookie Recipe

Sugar cookies are delicious with a glass of milk or a cup of coffee or tea. I also love to serve sugar cookies as part of a larger dessert spread featuring other sweet treats like cupcakes, various cookies, and bars. These classic cookies also make delicious desserts after almost any of your favorite classic main dishes.

Easter Sugar Cookie Recipe FAQ

How do you decorate cookies for Easter?

The easiest and most common method of decorating cookies for Easter or any holiday is by using frosting or icing. For simple cookies, use color frosting. If you’re feeling fancy and have an artistic side, you can use royal icing and make various designs on your cookies.

Should sugar cookies be soft or crispy?

That’s largely a matter of personal preference and the ingredients used. Some sugar cookie recipes make crispy cookies, while others like these create soft, chewy sugar cookies.

Do you need to chill the dough?

This cookie dough doesn’t need to be chilled. Some cookie doughs that are extra buttery or on the thin side need to be refrigerated to slow the rate at which the butter melts inside the dough as the cookies bake. This slowing prevents the cookies from spreading too much.

Can you freeze Easter sugar cookies?

Absolutely. Both sugar cookies and buttercream frosting freeze very well.

Easter Sugar Cookie Recipe – How to Store Leftovers

You can store these cookies in an airtight container in the refrigerator for up to 5 days. For longer storage, you can freeze these cookies in an airtight container for up to 3 months. Be sure in either case that the cookies are stored in a single layer with parchment paper placed between them.
