The apples and cider make this soup sweeter than regular French onion soup, but it’s still thick, hearty, delicious, and perfect for fall!

Ingredients:

  • 3 T butter
  • 3 lbs of yellow onions
  • ½ C water
  • 1 t chopped thyme
  • 2 apples
  • 3 T flour
  • 1 C white wine
  • 1 C apple cider
  • 2 C beef broth
  • 2 whole bay leaves
  • a splash of brandy (optional)
  • salt and pepper to taste
  • thick slices of bread (I used a French loaf, but sourdough or Italian will work great too)
  • 1 ½ C Gruyere or Jarlsberg cheese, grated

NOTE: If you want a sweeter soup, use sweet white wine and apple cider; if you want something a little less sweet, use a dry white wine and use unsweetened apple juice instead of the cider.

Directions:

Start by chopping the onions into small pieces.

Melt the butter in a large soup pot, large enough to hold all of the soup.

Once the butter is melted, add the sliced onions and the water and cover.Cook the onions on medium heat until they are tender, caramelized, and golden. This part takes a while (about 2 hours), but you only need to check the onions every 20-30 minutes to make sure they aren’t burning. If needed, add a bit more water as the onions cook. I find I usually add ¼ C to ½ C every half hour or so before the onions were fully cooked. You don’t want them swimming in water, but you don’t want them burning either.

While the onions cook, peel and julienne the apples.

When the onions are finished they’ll look like this: (Yes, that’s 3lbs of onions cooked down! Amazing how small they get!)

Once the onions are cooked, stir in the sliced apples and the thyme. Stir the soup for a few minutes as it continues to cook. Then slowly mix in the flour and stir for another few minutes.

Then add the wine and stir to deglaze the pan; the wine should pick up all the brown bits of onion stuck to the bottom of the pan.

Once the pan is deglazed, add the cider, beef broth, and bay leaves. Bring the soup to a boil, then reduce heat and simmer for 30 minutes.

While the soup cooks, grate the cheese and cut the bread into thick slices. Lightly toast each slice in a toaster.

After 30 minutes, add a splash of brandy to the soup and then salt and pepper to taste. This part is pretty important because it will help balance out the sweetness of the apples and cider.

Ladle out the soup into oven-safe bowls.

Top each bowl with a piece of toast.

Sprinkle grated cheese over the whole bowl of soup, making sure it covers the bread and the surface of the soup.

Turn on your broiler and put the bowls in the broiler until the cheese bubbles and turns slightly brown, about 2 to 3 minutes. Be careful when pulling the bowls out of the broiler, they will be way too hot to touch for about 10 to 15 minutes.

Add a spoon, and enjoy!

I LOVE this recipe, and it would be perfect for my new link party. This link party is called ‘Required Ingredient Recipe Link Party’ and I’ll be holding it every Sunday, starting right now.

The idea is to focus on a single ingredient each week and I’m starting off with cheese because everyone loves cheese!

I’m planning to do a ton of promotion to get this link party off the ground, so any recipes you post should get lots of attention.

Regardless of if you link up or not, I’m pinning this recipe! Yum!

Hope to see you at the link party…

Yep, I definitely think you could do it in a crock pot! It would probably still be a two step process (cook the onions first, then add the rest of the ingredients and let the whole thing cook a little while longer) but I bet you could do it!

FAQs

How do you deepen the flavor of French onion soup? ›

My personal go-tos include worcestershire sauce, fish sauce, and brandy. Each deepens the flavor of french onion soup. Balsamic vinegar and soy sauce are other great options.

What is the difference between onion soup and French onion soup? ›

What is the Difference Between Onion Soup and French Onion Soup? French onion soup is always made with beef stock. Other onion soups can be made with chicken, vegetable, or beef stock. Additionally, French onion soup typically contains wine or sherry, which isn't typical or necessary in other onion soups.

Why is my French onion soup too sweet? ›

Onions are very sweet, especially when they're cooked down, and that is the main purpose of onion soup. The sweetness can be balanced by adding some dry wine or vinegar. Taste as you go and don't overdo it. A little salt will balance it too, but don't forget that the grated cheese you will top it with is salty.

What broth is French onion soup made of? ›

This soup traditionally is made with beef stock, though sometimes a good beef stock can be hard to come by and expensive to make. If you use boxed stock, taste it first! If you don't like the taste, don't use it. (If you cook a lot of beef or beef roasts, save the scraps and freeze them to make a stock with later.)

What can I add to soup for depth of flavor? ›

"If your broth is lacking in savory richness, try adding roasted onion, tomato paste, mushrooms, seaweed, soy sauce, or miso. These ingredients add umami flavor and depth to broth," she says.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

Does it matter how you cut onions for French onion soup? ›

For French onion soup, it is best to slice the onions into thin, even slices. This will allow them to cook evenly and caramelize properly. You can achieve this by cutting the onion in half, placing the flat side down, and slicing it widthwise into thin slices.

Why is French onion soup so good? ›

French onion soup is the ultimate comfort food. Onions get slowly cooked until sweet and caramelized, then simmered in rich broth until they're practically falling apart. To finish it off, toasted bread is added to give it that lovable crisp-gone-soggy texture and a generous amount of Gruyère cheese is melted on top.

What kind of onion is best for soup? ›

When you are sauteing onions to build flavor as a base for your dish (soup, tomato sauce, you name it), the yellow onion is your friend. That being said, white onions are a totally acceptable substitute for yellow, especially if you're cooking them.

Why are my onions not browning for French onion soup? ›

Not cooking the onions long enough.

→ Follow this tip: Cook times will vary depending on the number of onions you're cooking and the type of onion (its sugar content and age), but plan to cook caramelized onions for 40 to 50 minutes (at least) until they have a dark-brown, rich color.

Burned onions – result in bitter soup. Be careful to not burn the onions/cook them until they are too dark in color – you don't really need to cook them until they are dark brown – golden brown/light brown is enough.

Why does my French onion soup taste burnt? ›

Yes, over high heat, onions can brown on the surface very quickly, especially in a pan that's not crowded. But the goal of caramelizing onions isn't just to brown the surface; it's to transform the onions so that they're soft and sweet to the core. Try to rush it and all you'll end up doing is burning them.

What cheese can I use instead of Gruyère in French onion soup? ›

Other Swiss types of cheese like Raclette cheese or Appenzeller Cheese or Dutch cheeses like Edam cheese or Gouda or Jarlsberg cheese from Norway or American Swiss cheese can all be substituted.

Why does French onion soup have bread in it? ›

How do you doctor up canned French onion soup? ›

Infusing the soup with a richer taste is as easy as quickly sauteing crushed garlic before pouring the soup in. Some soft, buttery garlic sauteed in earthy olive oil is the perfect addition to enrich canned French onion soup.

How do you make soup taste stronger? ›

Use fresh vegetables, high-quality meats or broth, and fresh herbs to add depth of flavor. Add acidity: A squeeze of lemon or lime juice, a dash of vinegar, or a splash of wine can brighten the flavors of a soup and make it taste more complex.

How do you get the depth of flavor in vegetable soup? ›

A squeeze of citrus, a dollop of yogurt or a drizzle of cream, a dusting of cheese or a good chile powder, a sprinkling of some herbs or croutons — all can take a perfectly fine soup into the realm of the delectable. Even a spiral of good olive oil to finish and some coarse sea salt can do wonders.
