Although I love all these recipes and would eat them for breakfast, lunch, snack or dinner any day of the week!

So whenTwin Cities Live asked me to come on air and share some of my favorite breakfast recipes, I thought, ‘why haven’t I shared these on the blog yet?!’ So this week youare getting a two for one — I’m sharing my 5 favorite, easy and healthy avocado breakfast recipes on the blog and I’ll be on Twin Cities Live this Thursday, January 12th, sharing some of these recipes and all my tips + tricks for eating a healthy, well-rounded breakfast.

A classic staple breakfast or mid-day snack. Also great for pairing with a bowl of warm veggie soup for lunch. I personally prefer my avocado toast over a Food For Life Baking Ezekiel Sprouted Grain English Muffin.

  • 1/2 Avocado
  • Salt + Pepper to Taste
  • Optional Add-On’s: Vital Proteins Collagen Peptides {stir into avocado mixture}, sprouts, tomato or pretty much any fruits or veggies you’d like for toppings

Instructions:

  2. Mash 1/2 avocado over toast/english muffin.
  3. Add salt and pepper to taste. Feel free to add any additional toppings you prefer and enjoy!

Take that avocado toast recipe from above and top it with a runny egg! I pretty much lived off avocado toast + over-easy egg throughout the first trimester of my pregnancy. Again Ipersonally prefer my avocado toast + egg over a Food For Life Baking Ezekiel Sprouted Grain English Muffin.

Ingredients:

  • 1-2 Slices Sprouted Grain or Whole Wheat Toast or English Muffin
  • 1-2 Large Organic Cage-Free Brown Egg, Sunny Side Up or Over Easy
  • 1/2 Avocado
  • Salt + Pepper to Taste
  • Optional Add-On’s: Vital Proteins Collagen Peptides {stir into avocado mixture}, sprouts, tomato or pretty much any veggies you’d like for toppings

Instructions:

  1. Place toast or english muffin in toaster.
  2. While your toast is toasting, cook 1-2 eggs in a frying pan to your desired preference {may need to spray or coat pan with a little coconut oil}
  3. Mash 1/2 avocado over toast/english muffin.
  4. Add salt and pepper to taste. Feel free to add any additional toppings you prefer and enjoy!

Avocado Tortilla + Egg Scramble: 5 minutes, 3 ingredients

Ah, the classic breakfast burrito. When I’m in a pinch and in need of a quick snack, I’ll often just mash 1/2 an avocado into a corn tortilla. Viola! That’s it. But if you want to get fancy you can add some scrambled eggs and veggies of choice making this a true gourmet meal in 5 minutes or less!

Ingredients:

  • 1Sprouted Grain, Whole Wheat or Corn Tortilla
  • 2 Large Organic Cage-Free Brown Eggs,Scrambled
  • 1/2 Avocado
  • Salt + Pepper to Taste
  • Optional Add-On’s: Vital Proteins Collagen Peptides {stir into avocado mixture}, sprouts, salsa, sautéedkale, mushrooms or any veggies you’d like for toppings

Instructions:

  1. Scramble 2 eggs in a frying pan to your desired preference {may need to spray or coat pan with a little coconut oil}
  2. While your eggs are cooking you may also want to heat or slightly warm your tortilla
  3. Then mash 1/2 avocado onto the tortilla
  4. Top avocado mixture on tortilla with scrambled eggs
  5. Add salt and pepper to taste. Feel free to add any additional toppings you prefer and enjoy!

Avocado + Egg Boat: 5 minutes, 3 Ingredients

Now we are getting real fancy — avocado boats! You can make these the hard way by baking the egg into the avocado, or you can do it the 5-minute, easy way by simply topping your avocado with an egg cooked to your liking {I prefer over-easy}. But in my opinion what really makes this avocado boat is thePesto + Quinoatopping fromTrader Joe’s. Seriously friends, if you live near a Trader Joe’s you need to pick up a jar of this Pesto + Quinoa — it will change the way you eat eggs and salads forever.

Ingredients:

  • 1-2 Large Organic Cage-Free Brown Egg(s),Sunny Side Up or Over Easy
  • 1/2-1 Avocado
  • Salt + Pepper to Taste
  • Optional Add-On’s: Trader Joe’s Pesto + Quinoa{or add your own quinoa and pesto}, sprouts, salsa, or any veggies you’d like for toppings

Instructions:

  1. Cook 1-2 eggs in a frying pan to your desired preference {may need to spray or coat pan with a little coconut oil}
  2. Slice avocado and top halved avocado with eggs, quinoa, pesto and anything else you desire
  3. Add salt and pepper to taste and enjoy!

Avocado + Eggs To Go: 1 minute, 2 ingredients

And finally, the ultimate grab-n-go breakfast! When I’m really in a pinch and need to get out the door I grab two hard boiled eggs out of the fridge, an avocado, a knife and I jet out the door. Of course this breakfast requires that you pre-prep some hard-boiled eggs which I highly recommend as they are a great, high-protein snack to always have on hand.

Ingredients:

  • 2 Large Organic Cage-Free Brown Egg, Hard Boiled
  • 1/2-1 Avocado

Instructions:

  1. Grab your 2 {pre-prepped and hard boiled} eggs out of the fridge
  2. Pair them with 1/2-1 full avocado and you have breakfast on the go
